Howdy. Long time no see! Well, long time no write, anyway. It's been about a month since I last wrote, and while I am not going to make excuses, I will say that I've been going through a bit of a rough spot lately, so sorry for the lack of posts. The other thing that I'm not going to make an excuse for is the lack of photos for this post. I made myself a pretty decent dinner and I'm going to write about it, but I was so hungry when I finished cooking that I just sat down and ate it. No time for photos. Not even a little one.
Even though I don't do it as often as I'd like to, I find a lot of comfort in cooking for myself. (It's the same sort of satisfaction that I get out of crafting, I think.) However, the most I can commit to right now are things that I can make quickly and easily. Tonight I made Parmesan breaded (fake) chicken breast, mashed potatoes, and some stir-fried zucchini and onions.
May sound a little fancy, but it's really not; to bread the "chicken" I mixed mayonnaise and Parmesan cheese, coated the "meat", then rolled it in some breadcrumbs and tossed it into the oven for about 25 minutes at 350F. I got the recipe off of a mayo jar a few years back, and it's actually pretty good. (I love recipes with only three ingredients! So easy! And it was way simpler than the recipe for Parmesan breaded chicken that was on the Parmesan container.) Plus, I don't have to waste an entire egg for the breading since I'm only making one or two servings at a time.
Needless to say, I'm in a better mood now than I was earlier this evening. Accomplishing something (even if it's just mayo-breaded fake chicken) and satiating hunger (by my own doing!) do wonders for my psyche and well-being.
