
I didn't know what I wanted to make, but I knew I wanted pasta tonight, so I raided my fridge for veggies. Came up with mushrooms, sugar snap peas, and onion, with spinach to top. Made a quick alfredo sauce with some pecorino and leftover cream (only used half a container for these tarts), and tossed everything with some campanelle pasta with a little more pecorino on top.
It did involve some two handed cooking (left hand stirs the sauce to make sure it doesn't boil, right hand sautes the veggies) which I'm not very skilled at, but in the end, pretty delicious.
