last throes of summer.

fried zucchini.

My parents gave me a couple of little zucchini they grew in their garden this summer. I sliced this one up and "battered and fried" it as a side dish tonight. And by "battered and fried" I mean that I mixed mayonnaise and parmesean cheese and coated the zucchini with that, dunked them in bread crumbs, and pan fried them.

The mayo/parm mixture is really handy if you're not battering a lot of food (in my case, one small zucchini), and you don't have to waste half an egg, since you can mix up only as much as you're planning on using. It's not quite the same taste, but it does in a pinch.

And boy was this pinch tasty.
